Treat yourself, friends & family with these delicious cookies - Happy baking!Â
IngredientsÂ
- 1 cup paleo baking flourÂ
- 1/3 cup organic coconut sugarÂ
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1 tbsp ground coffee
- 2 crushed candy canes
- 1-2 cage free eggs
- 1/3 cup extra virgin unrefined coconut oil
- 1/2 tsp vanilla
- 1/3 tsp peppermint extract
- 1/4 cup dark chocolate chipsÂ
DirectionsÂ
- Heat the oven to 350
- Combine paleo baking flour, organic coconut sugar, baking soda, baking powder and crushed candy canes in a mixing bowl
- Add in wet ingredients and mix well
- Fold in dark chocolate chips
- Roll the dough into balls or use a small ice cream or cookie scoop
- Place about 2 inches apart onto ungreased cookie sheet
- Pop them in the oven for 10-12 minutes
- Add on some extra candy cane for the last five minutes
